Introduction

This is what happens when you have too many bananas going ripe on you! This wonderful recipe idea 'sparked' on me just when I was about to have breakfast this morning. Not only is it low in fat, but also it is packed with protein, fiber, and calcium. It is a great way to start your day. Need more protein? Substitute 1/2 the flour with one scoop of protein! Enjoy! Ingredients

    Dry ingredients:
    1/2 cup of oatmeal, grinded to powder in food processor (about 1 or 2 min.)
    1/2 cup of whole wheat flour, sifted
    1 teaspoon baking powder
    4 tablespoons of Chia Seeds
    7 packets of Splenda

    Wet ingredients:
    2 eggs, large
    1 ripe medium banana, mashed
    1/4 cup of apple juice
    non-stick spray, butter flavored preferred

Tips

I made baked my batch in a square pan, for easier equal distribution. But you can try muffin cups, or even a round baking pan. This is not an overly sweet treat. Rather, it is mean to appease the urge to have your coffee with a donut in the morning!


Directions

Preheat oven to 400 degrees. Spray a square pan, or shape of choice, with non-stick spray. Set aside. In a bowl, mix all dry ingredients; set aside. Mix mash bananas with two eggs. Add the dry ingredients. Mix well; mixing by hand with a spatula is recommended to avoid over-mixing. Add the apple juice at the end to soften the mix. Poured into pan and bake for about 30 minutes or until done. To check, insert a dry toothpick in the middle and if done, it will come out batter-free. ENJOY!
