Introduction

Ingredients

    16 oz 2% cottage cheese,
    12 oz fat free sour cream,
    1-2 packets of Ranch Dressing Mix
    2-3 tablespoons water
    1/2 large red pepper, chopped
    one green onion, chopped,
    1/2 cup fresh spinach, chopped

Tips

Cut the vegetables really small or chop up in the blender or food processor. I didn't want to put the red pepper in the blender because it would have turned the dip pink. Use whatever vegetables you like. Put in fridge for about 2 hours for the flavors to blend. Serve with vegetables and crackers.


Directions

Mix 16 oz 2% cottage cheese in blender or food processor until smooth, the pour into a medium size mixing bowl
Stir in 12 oz sour cream to cottage cheese
Mix 2-3 tablespoons of water with 1-2 packets of Ranch Dressing Mix. Stir it until there are no lumps. Add to cottage cheese and sour cream. Start out with one packet then add more to taste. I like less so the flavor of the vegetables stands out more.
Add
1/2 large red pepper, chopped
1 green onion, chopped,
1/4 cup fresh spinach, chopped

Serving Size: Makes 30-2 tablespoon servings
