Introduction
These are easy and nutritious and taste great dipped in your favorite marinara. Ingredients

18 oz Pizza Dough
1 1/2 cups chopped Broccoli
1 cup chopped Mushrooms
2-3 chopped Green Onions
3 cloves Garlic
1/3 cup Ricotta Cheese
2 oz grated Mozzarella Cheese
>1 Tbsp Olive Oil
Spices to taste: such as "Italian Seasoning" aka Oregano, rosemary, tarragon, basil, dill, pepper, etc.
Directions
Makes 4-6 palm-sized half-moon servings
PREHEAT OVEN TO 350F
*If you are making your pizza dough from scratch, begin this first. If using store bought fresh dough, place in a bowl covered by a towel and allow to rise while you prep the other items.
1) Chop Broccoli, mushrooms, green onions and garlic into little piles (or if you're into cooking shows, little ramekins)
2) Heat olive oil in skillet or wok on medium heat, sprinkling in your seasonings (I use a dash of Italian Seasoning, liberal dill weed, a couple of grinds on the pepper grinder and a pinch of dried garlic)
3) Sautee garlic and onions until they begin to turn clear, then add the other veggies and continue to stir until they are cooked well and have reduced in size. Set aside and allow to cool
4) Stir ricotta and mozzarella together and then combine cooked veggies into this mixture.
5) Set aside cheese/veggie filling, and stretch a handful of pizza dough into a flat thin circle. (I like to use flour on my hands for this, my sister oils her hands instead - either way, you don't want the dough to stick to your fingers)
6) Spoon filling mixture, into each stretched dough circle, folding the dough over onto itself and pinching it together. If it doesn't stick well, you can use a little water on your finger to make the two sides adhere.
7) Place on a foil lined, or greased baking sheet, poke a couple of vent holes in the top of each one and bake at 350F for 20-25 minutes.
8) Serve with a little marinara sauce in a ramekin if you like.
