Ingredients

1 Chicken Breast Filet, boiled in water, cooled, then chopped (do not use canned chicken)
1 Red Apple, peeled, cored and chopped
2 Stalks Celery, chopped
1 Medium Slice Onion, chopped
1/8 C. Walnut pieces
1 tsp. garlic powder
1 tsp. fresh ground pepper
2T. Trader Joe's Plain Lowfat Greek-style yogurt
2T. Best Foods (Hellman's) LIGHT Mayo
2 Papayas
celery salt (optional for those that can't live without salt).
Directions
Bring water to boil, reduce to simmer, add the chicken and poach until the chicken is cooked through. Remove from water, let cool. Can be made 1 day ahead and stored in refrigerator.
Cut chicken breast and chop, set in a glass bowl.
Add the apple, celery, onion, garlic powder, black pepper, walnuts, toss.
You can also add celery salt if you feel you need salt in the recipe.
Fold into the chicken, the yogurt and may.
Cut the papaya in half,
fill each half with scoop of the chicken salad.
