Introduction

I threw this together one day when I needed to get more vegetables in for the day, and I had these on hand. It turned out surprisingly well. I threw this together one day when I needed to get more vegetables in for the day, and I had these on hand. It turned out surprisingly well.

Ingredients

    1 tsp olive oil
    1 small onion, sliced
    2 medium carrots, cut in sticks
    1 tomato, chopped
    1 cup fresh mushrooms, sliced
    1/2 ts. salt
    dash pepper
    1 ts. italian seasoning

Directions

Heat Olive Oil in pan with italian seasoning. Add onion and carrots, cook until onions are clear, about 2 minutes. Add tomato and mushrooms, salt and pepper. Cook 2-3 minutes, until mushrooms are just cooked. Makes 2 1-cup servings.
