Number of Servings: 4

Ingredients

    1 8oz package tempeh (any variety)

    1 Tablespoon canola oil

    1 Tablespoon soy sauce (optional)

    6 cups salad greens of your choice (romaine, baby spinach, etc)

    1 cup assorted veggies of your choice, chopped (peppers, broccoli, carrots, etc)

    salad dressing of your choice

Directions

Wash and chop your greens and veggies, and toss together in a large bowl. Chop the tempeh into 1/2 to 1-inch pieces, and fry them in a skillet in the canola oil until they are golden brown and crispy on the outside (5 minutes or so). When the tempeh is almost done cooking, add the soy sauce and stir to coat.

Portion the greens into 4 servings (approximately...depending on how hungry you are) and top with the fried tempeh and dressing of your choice.

Makes about 4 2-cup servings.

    Yummy, I used a small amount of Kraft sesame dressing for a real zip. Love the nutty tempeh flavor. Great carry to work meal. Warm or cold tempeh, both good. - 6/22/08
