Introduction

This is my take on harvest soup. It is a good meal on its own or with a nice bottle of wine. This is my take on harvest soup. It is a good meal on its own or with a nice bottle of wine.
Number of Servings: 4

Ingredients

    50 grams Unsalted Butter
    1 Bay Leaf
    2 Carrots/diced
    2 Red/Green peppers/diced
    1/4 Swede or 1Turnip/diced
    1 Onion/diced
    50 grams Dried Lentils
    50 grams Dried Soup Mix
    Salt and Pepper to taste
    3/4 Pint Chicken Stock
    1/2 Milk
    1 tbs Corn Flour/or just flour

Directions

In a large pan melt the butter and then add the onion, carrots, red/green peppers and the swede/turnip. Cook for about 10 minutes or until soft.

Add the lentils, bay leaf, dried soup mix and the chicken stock. Bring to boil and then simmer for 30 minutes.

Add the flour to the milk and pour into the soup. Let it thicken and then simmer for 5 minutes. Serve and eat with fresh crisp bread/rolls.



Note. Dried soup mix I got from Asda and it is lentils,barley wheat,peas etc.



You can add cheese to this soup or some nice croƻtons.
