Introduction

This is one of my favorite spring/summer salads! It is lemony, light and fresh tasting. The addition of more in-season veggies and/or more protein can take this from side salad to main course. Ingredients

    2 C. water
    1 1/2 C. plain dry couscous
    1/2 C. peas, frozen
    3 TBSP lemon juice
    1 medium clove garlic, minced
    1 TBSP olive oil
    1 can (15oz.) chickpeas, drained and rinsed
    1/2 C. chopped fresh parsley leaves
    3 meddium scallions, chopped
    4 oz. feta cheese (reduced fat), crumbled
    Fresh ground black pepper and salt to taste

Directions

1. Bring water to a boil in a medium sauce pan. Remove from heat, stir in couscous and peas. Cover and let stand 10 mins. Transfer couscous mixture to serving bowl and fluff with a fork.

2. Meanwhile, whisk together lemon juice, garlic, and oil in small bowl. Add lemon juice mixture and chickpeas to couscous, toss well to combine, and cool to room temperature, about 20 minutes. Toss in parsley, scallions, and feta. Adjust seasonings with salt and pepper. Serve at room temperature.

Makes approx. 8 - 1/2C. servings
