Ingredients

    16 oz Keta Salmon Fillet, thawed
    1 tsp Old Bay Seasoning
    1 tsp Garlic Powder
    1/2 tsp Lawry's Seasoning Salt
    1/2 tsp Black Pepper
    1 Red Bell Pepper, finely diced
    1/2 cup Red Onion, finely diced
    1 stalk Celery, finely diced
    1 cup Seasoned Whole Wheat Bread Crumbs
    1/2 cup Eggbeater's
    3 tbsp Light Mayonnaise
    3 tbsp Fat Free Sour Cream
    1 tsp Texas Pete Hot Sauce
    1 Tbsp Italian Seasoning
    Olive OIl Cooking Spray


Tips

This can be served "burger style" on a roll with your favorite toppings or as an entree with your favorite sides.


Directions

Preheat oven to 450. Line baking pan with foil. Coat foil generously with nonstick cooking spray. Place salmon on pan skin side down and sprinkle with Old Bay, garlic powder, Lawry's Seasoning Salt, and black pepper. Place on center rack of oven to bake for 5 minutes. Set aside to cool. Saute bell pepper, onion and celery until soft and translucent. Once salmon is cool enough to handle, remove skin and place in a large mixing bowl. (Replace foil and coat with spray again.) Add sauteed vegetables and all remaining ingredients. Mix well, breaking salmon into small flakey pieces. Form into 6 patties and place on foil lined pan. Coat tops of patties with olive oil spray. Bale on middle rack of oven for 10-12 minutes or until browned, turning once halfway through cooking time.
