Ingredients

    2 tsp ground Allspice
    3 tbsp whole Mustard seed, yellow or black
    4 cup Cider Vinegar
    2 pounds Raisins
    1 clove grated Garlic
    2 TBSP Ginger Root (dry ground or fresh grated)
    4 cup, packed Brown Sugar
    2 tsp Diamond Crystal - Kosher Salt

    Vegetables and apples chopped into a 1/2" dice
    1 cup, chopped Onions, raw
    2 medium sweet, red, bell peppers
    24 tart apples, medium, peeled and cored (about 5 oz. each)

    chopped into a 1/4" dice
    2 red hot peppers, fresh

Directions

Combine all ingredients in a large saucepot. Simmer until thick, about 1 hour and 15 minutes. Ladle hot chutney into hot jars, leaving 1/4" headspace. Adjust two-piece caps. Process 10 minutes in a boiling water canner. Yield: about 10 pints.

Serving Size: 1 oz on food scale or 2 tbsp
