A lowfat but tasty treat for the whole family. Makes 2 loaves or 18 muffins. A lowfat but tasty treat for the whole family. Makes 2 loaves or 18 muffins.
Number of Servings: 20


    2 cups wheat flour
    2 eggs beaten
    1/4 cup Brown Sugar Splenda
    1/4 cup splenda
    1/4 tsp. Allspice
    1/4 tsp. Cinnamon
    2 carrots sliced thinly
    4 tbsp. butter-- cubed and softened
    2 tsp. Baking Powder
    3/4 cup skim or 2% milk


Combine flour and baking soda, add softened butter--cut butter into flour mixture using either a pastry cutter or two knives. Make sure that butter is mixed in well.

Combine all other ingredients mixing in with flour/butter mixture using a wooden spoon or spatula.

Makes 2 loaves or 18 small muffins. Preheat oven to 350 degrees. For the two loaves the cook time is 45 minutes, for the muffins it's around 30 minutes.
