Number of Servings: 2

Ingredients

    25 g (1 oz) butter
    150 g (6 oz) leeks sliced finely
    150 g ( 6 oz) potato peeled and diced
    75 g ( 3 oz) lean bacon chopped (or use bacon bits)
    145 ml 1/4 pint of milk
    290 ml 1/2 pint of chicken/vegetable stock
    Ground black pepper to taste
    Cream (optional)

Directions

Saute the leeks and bacon in a pan until they are soft about 5-10 minutes.


Mean while put the potatoes in the microwave and cook for 4 minutes.


Add the potatoes and the stock to the leeks and bacon. Cook until the potatoes are tender and then use a blender to liquidize.


Add the milk, cream and pepper and simmer for 2 minutes then serve.
