Introduction

This is such a simple and very tasty casserole. There is no reason why you couldn't use chicken, turkey, beef or pork, the sauce goes well with either. Add whatever vegetables you wish and vary the herbs to your taste.

Ingredients

    4 medium Lamb Shanks, fat trimmed off
    1/4 cup Wholegrain flour
    1 Tblspn Oil, Olive or Canola
    1 medium Onion, chopped
    2 medium Carrots, chopped
    2 rashers 97% fat free Bacon, chopped
    2 Garlic Cloves, minced
    1 can Salt Reduced Condensed Tomato Soup (@ 14.8oz US, 420 g Australian)
    2 cups Water
    1 tsp chopped Thyme or Oregano

Directions

1. Heat oil in skillet.
2. Coat shanks in the flour and brown in the skillet, remove.
3. Add onion, carrot and bacon to the skillet and saute for a couple of minutes.
4. Return the shanks to the skillet, pour in the tomato soup, water and herbs. Bring to the boil, reduce heat, cover and simmer for 1 1/2 to 2 hours, until lamb is tender.

    Wonerful! Fabulous. It was just as good as I hoped it would be. Hubby LOVED it!! We'll be having this again. I did change to the crockpot...on low...all day. Perfect! - 2/26/09
