Ingredients
-
16 oz uncooked, breaded chicken breast filet (by LILITCORAZON)
1 cup, strips or slices Carrots, raw
2 oz Onion, sweet, raw
4 medium (2-1/4" to 3-1/4" dia.) Potato, raw
10 beans (4" long) Green Beans (snap)
2 tsp Knorr Chicken Bouillon
1 cup Flour, Self-Rising, Enriched (by STALEAN)
0.25 tsp Granulated Sugar
1 large Egg, fresh, whole, raw
2 tbsp Extra Virgin Olive Oil
0.5 cup (8 fl oz) Water, tap
0.25 cup Great Value Instant Nonfat Dry Milk Powdered
Directions
The chicken stew:
Cut the chicken, carrots, potatoes, green beans and onion into whatever size cubes or chunks make you happy - small for families with young children or large for adults.
Place the above list in a large crock pot and cover with water.
Add 2 broken Knorr chicken bouillon cubes or 2 good spoonfuls of granulated chicken bouillon.
Add a pinch or two of salt and a pince of pepper.
Time:
I use a 6 quart pressure cooker when I'm in a hurry. You could also use a large stock pot on top of the stove. Pressure cooker times vary but it usually takes about 30 minutes total. Follow manufacturers' instructions for the use of your cooker. Stove top time would take about an hour to an hour and a half on a medium setting. Crock pot time would also vary depending on size and brand, but I would try 6 hours on a medium-low setting.
The Dumplings:
Mix the flour, egg, milk (or water and dried milk powder), oil (can be other type of oil - corn, sunflower, etc.) in a small bowl. Add a pinch or two of salt, pepper, sage, and oregano if desired. I use a fork to mix until all ingredients are well combined. Set aside. If you are using a crock pot, refrigerate until needed.
After you verify that the chicken is well done and all your vegetables are cooked, it's time to cook your dumplings. Bring the chicken mixture to a hard boil. Add a little more water if needed to recover vegetables before boiling. Add dumpling mix by small spoonfuls into boiling broth. You do not have to remove vegetables and chicken. Cover with a well fitting lid and reduce heat to lowest setting for about ten - fifteen minutes. If too much steam is escaping or broth is spewing out from under lid, reduce heat more or leave lid slightly ajar. It's best if lid is well closed during the cooking of the dumplings. If your dumplings are too large, cook a few minutes longer.
I like to serve with hot white rice cooked with garlic and lightly salted. A nice green salad would also be a good accompaniment.
Serving Size: makes 6 - 8 hearty servings
