Introduction

A wonderful and healthy salsa topping that goes well with salmon and chicken (that I know of). A wonderful and healthy salsa topping that goes well with salmon and chicken (that I know of).
Number of Servings: 4

Ingredients

    1-1/3 cups blueberries
    2/3 yellow bell pepper
    2/3 red bell pepper
    2 cloves garlic
    1/2 red onion
    1/4 cup cilantro
    2/3 jalapeno pepper
    2T lemon juice
    salt & pepper

Directions

Finely chop all vegetables. Mix with blueberries and lemon juice. Salt and pepper to taste. Let sit for as long as possible - it's even better the second day.
