Introduction

these muffins tase just like pumpkin pie! these muffins tase just like pumpkin pie!
Number of Servings: 12

Ingredients

    1 3/4 cup all purpose flour
    1 cup splena (or sugar if you wish)
    1 Tablespoon baking powder
    1 teaspoon ground cinnamon
    1/2 tsp nutmeg
    1/2 teaspoon ground ginger
    1/4 teaspoon allspice
    1 cup pureed pumpkin (canned)
    1/2 cup vegetable or canola oil
    2 tablespoons light brown sugar

Directions

Preheat oven to about 350-400 depending upon your oven (mine gets really hot so I put in on 350, my friends' doesnt, we do 425 at her house!)

Lightly grease your muffin tin with non-stick cooking spray.

Sift together the dry ingredients.... baking powder, sugar, flour, spices.

Separately combine milk, oil, brown sugar and pumpkins then whisk or lightly blend until smooth.

Combine wet and dry ingredients and mix well.

Fill muffin cups and bake 18-20 minutes until they pop up and a knife comes out clean. Allow to cool and enjoy!

    Complete disaster. The dough was so thick it was almost kneadable, and the finished muffins tasted mostly of flour with very little pumpkin flavour. - 10/22/12
