Ingredients

    2 cup Whole Wheat Flour
    1 tsp Baking Powder
    1 tsp Baking Soda
    .5 tsp Salt
    2 tbsp Butter, unsalted
    0.5 cup Dried Currants, Sun Maid (by MOON07)
    1 extra large Egg, fresh, whole, raw
    5 oz Fage Total 0% Fat Free Plain Greek Yogurt
    .15 cup Milk, 1%
    6 tsp packed Brown Sugar

Directions

Preheat oven to 375F.

In a mixing bowl, combine flour, baking powder, soda, and salt.
Cut in butter until it reaches a coarse meal consistency. (I started with two knives, then finished the process with my fingers.).
Add currants or raisins.

Combine liquids in a separate bowl. Use 3/4 cup buttermilk or the yogurt/milk combo. Add liquids to dry ingredients.

Mix until a soft dough forms. At some point it will become hard to stir it, and it will be better to use your hands. Kneading the dough is the best way to combine all the ingredients completely -- knead it gently until it is smooth (about 3 minutes). You can knead it right there in the mixing bowl.

Shape the dough into a ball, and place it on a greased cookie sheet or iron pan. Flatten the dough ball slightly and cut an X about 1/4" deep in the top of the loaf.

Bake at 375 for 35 minutes.

Serving Size: Makes a small round loaf
