Introduction

Ingredients

    1 stick Butter, salted
    1.5 tbsp, drained Capers, canned
    1 Whole Lemon (cut in half, slice one half thin and reserve other half for squeezing)
    0.15 cup Flour - Gold medal all purpose flour
    1.5 cup (8 fl oz) Chicken Broth
    2 clove Garlic
    Parsley for garnish

Tips

Do not overheat garlic, it will become bitter! Thin this sauce by adding small amount of water at the end or more lemon juice.


Directions

Brown 2 cloves of garlic in 3/4 stick of butter over medium heat. Do not burn butter or garlic. ((Tip: Add 1 tsp cooking oil to keep butter from burning.)) Once browned, add 1.5 cups of chicken broth. Squeeze in half of a lemon. Bring to a boil over medium high heat. In a separate container mix 1/4 cup water and 1-2 tblsp. of flour. Whip with fork until smooth paste/thick liquid forms. Add slowly into boiling liquid, stirring constantly. Bring back to slow boil and boil until sauce thickens. Add 1.5 tbsp of drained capers. Add the other half of lemon, sliced thin to the sauce. If sauce is too thick, add small amount of water or more squeezed fresh lemon juice to thin. Drizzle or pour over chicken or fish for a light, refreshing sauce! Top each piece of meat with one lemon slice from in sauce and a sprig of parsley.
