Ingredients

    2 tbsp Coconut Oil (melted)
    2 large Egg white, fresh
    2 tbsp Water
    2 tsp Vanilla Extract
    0.33 cup Honey (melted)
    1 tsp Cinnamon, ground
    0.5 tsp Salt
    2 cups Coconut, shredded sweetened
    1 cup Bob's Red Mill - Organic Whole Ground Flax Seed Meal
    2 cup Oatmeal, Arrowhead Mills Oat Flakes
    2 cup Pumpkin Seeds (whole seeds, roasted)
    2 cup pieces or chips Walnuts
    2 cup, chopped Pecans

Tips

This recipe can be made Paleo by omitting the oats.


Directions

Preheat oven to 300 degrees F and line baking sheet with edges with parchment paper.

In a bowl, whisk together Coconut oil, egg whites, vanilla, honey and cinammon. Heat coconut oil and honey as needed to make liquid. Be careful to not add egg whites too quickly as it could cook them. Mixture should be foamy.

In a large bowl, combine the rest of the dry ingredients, nuts, oats, etc.

Pour wet mixture into nut mixture and stir to coat.

Spread mixture into an even layer on baking tray. Add to oven and bake for 20 - 30 minutes or until golden brown. Stir once after 10 minutes.

Once browned, remove tray from oven and allow to sit for 10 - 20 minutes without stirring. This will help the granola to form clusters. Once cooled, gentle stir granola and place in glass jars
