    0.5 large (8-1/4" long) Cucumber (peeled)
    2.0 tbsp chopped Shallots
    1.0 cup Pumpkin seeds
    1.75 cup Chickpeas (garbanzo beans)
    0.5 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry
    4.0 tbsp Extra Virgin Olive Oil
    4.0 tbsp Coconut, shredded sweetened
    4.0 tbsp Braggs Apple Cider Vinegar
    3.0 stalk, large (11"-12" long) Celery, raw
    4.0 tbsp Trader Joe's Dried Fruit Dried Cranberries (4 Tbsp or 1/4 Cup)

Directions

Whisk Apple Cider Vinegar, olive oil, and salt to make dressing. Mix other ingredients. Stir dressing in. Serving Size: Makes 4-6 servings
