Introduction

My favorite when growing up was this German sweet 'n sour cucumber salad. I've lightened it up with low-fat sour cream and stevia. I leave the peels on for more texture and fiber. Ingredients

    0.5 cucumber (8-1/4") Cucumber (with peel)
    2 tbsp Sour Cream, reduced fat
    2 tbsp Heinz Distilled White Vinegar (by ASMECH)
    1 serving Pure Via (1 packet) All Natural Zero Calorie Sweetener (by LIZAANNERN)

Tips

Try different vinegars for an optional flavor.


Directions

In a medium bowl, combine 2 Tbsps of sour cream, 2 Tbsps of white vinegar, and 1 packet of stevia (I use Pure Via). Slice cucumbers (with peel) and add to mixture. Serve.
