Ingredients

1 large Egg
2 tbsp Cornstarch
pinch of salt and pepper
16 oz boneless, skinless chicken
2 tbsp Vegetable Oil
2 tbsp Soy Sauce
1 tbsp water
1/2 tbsp Toasted Sesame Oil
1 1/2 tbsp Brown Sugar
1 1/2 tbsp Vinegar
1 tsp Ginger Root
1 clove Garlic
2 tbsp Sesame Seeds
1 tbsp Cornstarch
2 tbsp chopped Green Onions
Directions
1. Whisk together egg, 2 tbsp cornstarch and a pinch of salt and pepper. Trim fat from chicken and cut into small pieces. Toss chicken in mixture.
2. Heat a large skillet with 2 tbsp of oil over medium high heat. When very hot, add chicken AND egg mixture. Cook stirring occasionally until golden brown (about 7-10 minutes). Drain off excess oil.
3. While chicken is cooking, prepare sauce. In small bowl stir together the soy sauce, water, sesame oil, brown sugar, rice vinegar, fresh ginger, minced garlic, cornstarch and sesame seeds.
4. Once chicken is cooked, pour sauce over top. Toss the chicken to to coat. Sauce will begin to thicken once it hits hot skillet. Once chicken is coated and sauce thickened turn off heat. Serve over rice (not included in nutrition calculation) and sprinkle with green onion.
