Ingredients

3 medium Zucchini, baby
1 medium (2-1/2" dia) Onions, raw
.5 cup Parmesan Cheese, grated
.66 cup Egg substitute, liquid (Egg Beaters)
3 oz Spinach - Dole Baby Spinach
3 medium slices, cooked (raw pro Bacon, pork, microwaved
2 clove Garlic
Directions
Spiral cut zucchini. Boil a pan of water. Drop in zucchini and cook for 1 to 2 min. Drain well.
Spray a pan with non-stick spray. Dice onion and bacon. Cook in pan until bacon is cooked and onion is tender.
Coarsely dice spinach. Drop into bacon pan and cook until spinach is wilted.
Combine egg, garlic and parmesan.
Add zucchini to bacon mixture. Mix well. Pour in egg mixture and cook, stirring regularly until egg begins to set and mixture is creamy.
Serve immediately.
