Introduction

Ingredients

    1 large Egg, fresh, whole, raw
    0.50 tsp Pepper, black
    0.50 tbsp Basil
    1 tsp Salt
    1 head, large (6-7" dia) Cauliflower, raw
    1.50 tsp Garlic
    0.50 tbsp Parsley
    4 oz President Fat Free Crumbled Feta
    1.25 cup crystal farms reduced fat mozzarella

Directions

Preheat oven to 425 and line a baking sheet with parchment paper. To rice the cauliflower, core it and break it into florets. The place it in a the food processor and pulse until it is the texture of rice.

In a large bowl, mix the cauliflower, 1/2 cup mozzarella cheese, feta cheese, 1 egg, 1/2 Tbsp fresh minced garlic, 1/2 Tbsp fresh basil, 1/2 Tbsp fresh parsley, 1 tsp salt, and 1/2 tsp black pepper until combined and holds together. Place the mixture onto the foil lined 10 1/2 x 12 1/2 inch baking sheet and spread out.

Bake in the preheated oven for 10-12 minutes. Remove from oven and top with 3/4 cup mozzarella cheese and 1/2 cup feta cheese and return to oven to continue baking until the cheese is melted and starting to brown. Cool about 10 minutes and cut into 12 "breadsticks" with a pizza cutter.

    Very Good
    I did not use Feta, only Kraft lowfat mozzarella cheese. They were delicious! I left them in the oven 10 minutes longer than the recipe calls for to get a "golden brown " color after the mozzarella topping was added. I also sprinkled some basil on top of the cheese. - 10/4/16
