Ingredients
-
1/2 chopped Onions, raw
1/4 cup, chopped Peppers, sweet, red, fresh
1 clove Garlic
1 tsp Extra Virgin Olive Oil
1 cup Bush's Black Beans Reduced Sodium - rinsed & drained
1/4 cup, chopped Red Ripe Tomatoes
1/4 cup Pace Chunky Salsa - Mild
1/4 tsp Ground Cumin
1/4 tsp Chili powder
1/4 cup shredded Cheddar Cheese
2 tbsp fresh Cilantro, minced
1 tbsp Lime Juice
Tips
Once the beans are rinsed & drained they become a bit paste-like. The addition of the tomatoes and salsa help smooth it out.
Directions
Heat olive oil in small skillet. Add onion, peppers and garlic and cook until tender.
Rinse and drain the black beans and mash (I used a mini food processor). Add beans to the pan and stir in tomato, salsa, cumin and chili powder.
Cook and stir until just heated. Remove from heat; stir in cheese, cilantro and lime juice. Serve with tortilla chips.
Serving Size: Maked about 4 servings of 1/3 cup each
