Introduction

Ingredients

    2 Tbsp butter
    1 c onion, chopped
    1 bunch green onions, chopped (original recipes calls for leeks)

    3 medium potatoes, peeled and
    2 c vegetable stock (one 14 oz can)
    1/2 tsp curry
    1/4 tsp red pepper

    1 c milk
    8 oz (1/2 lb) cooked shrimp, tails removed

Directions

- sweat all the onions (cook in the butter over medium heat until tender but not brown) in a large pot about 5 minutes

- add the stock, potatoes, and spices; cover and simmer 15-20 minutes until potatoes are very soft

- turn off the heat and stir in milk and shrimp, keep covered

- serve when shrimp are warmed
