Introduction

Ingredients

    6 oz (dried) Pasta - Barilla Whole Grain Rotini
    3 tbsp Extra Virgin Olive Oil
    1 serving 1 med yellow onion, diced
    3 clove Garlic, minced
    2 medium Heirloom Tomatos, large diced
    4 Mushroom, White Large, sliced
    1 medium Zucchini, sliced
    3 oz Baby Spinach (raw)
    2 tsp Dried Oregano
    2 tsp Dried Thyme
    6 leaves Basil
    4 tbsp Parmesan Cheese, grated

Directions

1. Cook pasta to al dente and set aside
2. Heat large saute pan
3. Add oil, garlic, and onion
4. Add remaining vegetables, stir
5. Add basil leaves to pan, lay atop
6. Cover and cook until vegetables are soft, remove basil
7. Add cooked pasta and parmesan, stir
8. Enjoy!
