Ingredients

    2 tsp Olive Oil
    50 grams Onions, raw sliced
    2 cloves Garlic, sliced
    50 grams Mushrooms, fresh sliced
    50 grams Zucchini sliced
    50 grams Green Beans, sliced into 1" pieces
    50 grams each of red and green bell peppers, sliced
    1 tsp Soy Sauce
    Dash Black Pepper
    5 Cherry Tomatoes, Fresh, cut in half
    Dash Chinese 5 spice seasoning
    0.5 tsp crushed chilli (optional)

    0.5 cup White Rice, long grain, cooked



Tips

A filling meal in itself, or use half the ingredients as an accompaniment.


Directions

Lightly stir fry the vegetables in the olive oil over a medium heat, adding them in the order stated in the ingredients list. When they are almost tender, add a couple of tablespoons of water, soy sauce, black pepper and the cherry tomatoes. Sprinkle over the Chinese 5 spice seasoning and crushed chilli, if used. Cook for a further minute, then serve on a bed of rice.
