Ingredients

    3 boneless, skinless chicken breasts, cut to bite size
    1 pkg frozen Sweet Corn
    1 can (15oz) Fire Roasted Petite Cut Diced Tomatoes (with garlic and Chipotle add flavor) plus 2 cans water
    1 can black beans, rinsed
    16 oz Tomato Sauce
    1 pepper Jalapeno Pepper, diced
    1 cup, chopped Onions, raw
    Add 2 tsp each cumin and chili powder, 2-4 chicken boullion cubes, salt and pepper to taste

    3 cup Brown Rice, medium grain - cooked

Directions

In your crock pot, add all ingredients except frozen corn and cooked rice, starting with only 1/2 the spices and buillion for now. Cook on high 4 Hours Or low 7-8 hours. Taste and add spices as needed. Add corn and heat through. Serve over 1/2c rice. Serving Size: Makes 6 good size servings
