Ingredients

    0.25 cup, chopped Walnuts
    0.25 cup Oats, Quaker
    0.25 tsp Cinnamon, ground
    0.75 cup Flour - Gold medal all purpose flour
    0.33 cup, packed Brown Sugar
    3 tsp Granulated Sugar
    4 tbsp Butter, unsalted
    5 cup, diced Rhubarb
    0.66 cup Granulated Sugar
    0.2 cup Flour - Gold medal all purpose flour

Tips

To reduce the calorie count for this recipe, and artificial sweetener like Splenda may be used to replace sugar.


Directions

Preheat oven to 400 degrees F. Set rack in the center of the oven. Prepare the topping, (the first 7 ingredients), by placing all of the topping ingredients into a food processor. Pulse or mix until the mixture is crumbled to the size of small peas; do not over process. Set aside. Pour the rhubarb directly into a large, shallow baking dish, (9 inch by 13 inch), and sprinkle with 1/2 cup plus 2 tablespoons sugar and 3 tablespoons of flour to coat evenly. Spread crisp topping over entire surface. Bake until fruit is bubbly and the top is golden brown, approximately 35 to 40 minutes.Serve warm of room temperature, plain or with ice cream.
