Introduction
This is a copycat of my Grandmother's Tomato Relish. Her recipe called for 2 pots of tomatoes; 1 pot of apples and 1/2 pot of onions. So it always begged the question - what size pot did she use? I have re-created (tested and approved) her recipe with quantities we can actually measure. This is a mild and slightly sweet relish/chutney that goes great on mashed potatoes and meatloaf. Ingredients
-
2 large tins diced tomatoes (8 cups)
6 cups apples, peeled and chopped
1 cup, onions, chopped
1 clove Garlic, minced
1 cup Distilled White Vinegar
2 cup, packed Brown Sugar
1 tbsp. Mustard seed, yellow
1 1/2 tsp. salt
1/2 tsp. cumin
If you want more of a chutney flavor you can add:
another 1/2 tsp. cumin
1 tsp. coriander
1 tsp. cinnamon
1 tsp. chili powder
Directions
Place all ingredients into a large pot and bring to a boil. Reduce heat to medium and simmer for 60 minutes, or until thickened, stirring often.
