    4 serving Tomatillo Sauce (by RAINA413)
    4 tbsp Trader Joe's Organic Whipped Cream Cheese Light
    .5 cup, pieces or slices Mushrooms, fresh
    .5 cup, chopped or sliced Red Ripe Tomatoes
    1 gram(s) Sliced Jalepeno Peppers - 1 oz, 30g 17 Slices (by KODAKINS)
    0.25 cup Cheese - 2% - 4 Cheese Mexican - Shredded - Kroger
    4 tsp Old El Paso Taco Seasoning Mix (40% Less Sodium)
    4 tbsp Hellmann's Mayonaise
    14 gram(s) Avocado Oil - Chosen Foods - 1 TBSP

Tips

may use sour cream and green onions on top for added appeal.


Directions

Put oil into baking dish. Put 1/2 of tomatillo sauce in baking dish. Butterfly the chicken breasts. Spread 1 tbsp of mayo on each breast, front and back side. Generously rub taco seasoning on the breasts. Place 1 tbsp of cream cheese inside each breast. Place about 6-8 mushroom slices in each chicken breasts. Place about 8 diced tomatoes inside each chicken breast. Close each breast to cover the inside ingredients. Place jalapeno on top of each breast. Pour rest of tomatillo sauce over breasts. Bake at 350 for 30 minutes. Top chicken breasts with cheese, return to oven for additional 10 minutes. sprinkle with cilantro serve on top of Spanish rice or bed of spinach.
