Ingredients

    30 medium whole (2-3/5" dia) Tomatoes, red, ripe, raw, year round average
    1 cup Honey
    3 tsp Ginger Root
    .5 cup Lemon Juice
    1 tsp Cinnamon, ground
    1 tbsp Pepper, black
    1 tsp Cloves, ground

Directions

Fill sink with cold water, add 1/2 cup of white vinegar to water to clean tomatoes. Add tomatoes and soak for about 20 minutes. Take tomatoes out, dry, and cube tomatoes with cuber or by hand.

Add tomatoes to large pot and the rest of ingredients, cook on medium high for about 1 hour. Allow tomatoes to reduce until mixture gets sticky, reduce to low head. Add jelly mixture to Ball Jars (4 oz), and it will fill 5 jars. Add seal and ring to jars and allow to cool. Wait for jars to "pop", and jars will be sealed.

Serving Size: Makes 5 8-oz Ball jars, 1 tbls per serving.
