Introduction

An easy and filling meal that uses only a few ingredients and makes great leftovers. An easy and filling meal that uses only a few ingredients and makes great leftovers.

Ingredients

    1.5 Cups Trader Joe's Whole Wheat Penne Pasta with flax
    1 LB Ground Chicken
    1 jar Trader Joe's Tomato Basil Marinara
    2 cups fresh spinach
    1 cup zucchini sliced
    1 cup Mozzarella Cheese, park skim milk
    3 Tbsp grated Parmesan Cheese

Directions

Preheat oven to 375. Bring water to boil and add pasta. Cook for approximately 8 minutes. Brown the ground chicken in a large skillet and cook thoroughly. Drain the pasta and combine with half the the marinara in a large bowl. Add the spinach and zucchini and mix together. Add the cooked ground chicken and the remaining marinara. Pour the combined ingredients into a 2 qt baking dish. Top with mozzarella and parmesan cheese. Bake for 25 minutes.
