Introduction

I threw this together on a night when the family was tired of chicken, turkey burger, etc. Everyone loved it, plus leftovers made a great breakfast the next morning! Ingredients

    10 large Egg, fresh, whole, raw
    3 serving Jimmy Dean Hearty Turkey Sausage Crumbles (1/2 c)
    3 cup Spinach, fresh
    2 cup, pieces or slices Mushrooms, fresh
    1 cup Kraft Mozzarella Finely shredded Part Skim cheese
    1 cup Kraft 2% Shredded Cheddar Cheese
    2 serving green onion fresh chopped - 1/4 cup (25g) (by JWC944)
    .5 tbsp Basil
    1 serving Garlic - minced (1 tsp) (by ELLERCADE)
    .5 tsp Pepper, black
    4 serving Half and Half Cream, Low Fat, Land O Lakes, 2 TBS
    0.25 cup Heart Smart Bisquick (mix only)
    2 tbsp Extra Virgin Olive Oil

Tips

Next time I make this I will add 1/2 to 3/4 c. of diced red bell pepper to the vegetable mix.


Directions

Preheat oven to 375 and prepare a 9x13" baking dish (spray with cooking spray). Saute chopped mushrooms and spinach leaves in olive oil until leaves start to wilt. Add chopped green onion and cook for another minute or two. Remove from burner to cool. In another bowl, whisk eggs together with basil, garlic, pepper, cream, and Bisquick mix.

Spoon the cooled veggie mix into the 9/13 pan, spreading evenly. Layer the cheese on top of the spinach layer, then layer the sausage crumbles on top of the cheese. Pour the egg mixture evenly over all and bake at 375 for 30 min., or until done in the center.
