Ingredients

    1.0 tbsp Pepper, red or cayenne
    4.0 ounces Chicken Breast (cooked), no skin, roasted
    1.0 lime yields Lime Juice
    1.0 small (5-1/2" long) Carrots, raw
    1.0 stalk, small (5" long) Celery, raw
    2.0 cucumber (8-1/4") Cucumber (with peel)
    0.25 cup Spinach, fresh
    14.0 gram(s) Avocado Oil - Chosen Foods - 1 TBSP
    0.5 cup Cabot Low Fat Greek Yogurt Plain

Directions

Cook the chicken in an airfryer. In the meantime, cut the all vegetables except the lime and the cucumbers in a food processor. Next, pull the chicken with 2 two forks. Place the chicken in a mixing with the chopped vegetables and squeeze some limes and pour a table spoon of avocado oil. Mix everything together with the yogurt and serve it over a cucumber boat. Serving Size: Makes 4 chicken boats
