Introduction

Yummy pastry for baked samosas. Can be stuffed with a vegetable mixture or made into pastry bases. I like baking it separately in order to cut serving size if I'm having a low energy day. Ingredients

    1 cup Flour, white
    .5 cup Flour, whole grain
    2 tsp Cumin seed
    .75 tsp Salt
    .125 tsp Granulated Sugar
    1 dash Pepper, black
    113 grams Butter, unsalted
    .25 cup Milk, nonfat (skim milk)
    .25 cup (not packed) Cottage Cheese, 1% Milkfat

Directions

A. Pastry Process
i. Measure flours into large bowl. Add pepper, salt and sugar.
ii. Toast seeds in a dry frying pan. (Heat on medium high heat, watching closely, 3-5 minutes). When a nice nutty aroma is reached, toss the seeds into the flour mixture. Stir through.
iii. Grate butter into flour mixture.
iv. Work through with hands to create a mixture that resembles breadcrumbs.
v. Measure cottage cheese into either a large container or blender. Add milk. Use a stick blender, blender or fork to either mash the curds or puree them.
vi. Add wet mixture to dry mixture.
vii. Work until it has just come together
viii. Place in fridge until ready to roll out. Can be kept for several days wrapped in plastic or in an airtight container.
B. Bake
i. Preheat oven to 200C
ii. Roll out to 3 mm thickness. I like making rough triangle shapes to echo the samosa.
iii. Place on nonstick baking sheet.
iv. Bake Pastry for 12 minutes.
