Ingredients

    2 lbs boneless skinless chicken breast
    2 Tbsp olive oil
    15 oz can pineapple chunks in juice
    1 cup chopped red bell pepper
    3/4 cup water
    1 tbsp cornstarch
    2 tbsp cider vinegar
    2 tbsp brown sugar
    1/8 tsp garlic powder
    1/8 tsp dried ginger
    1 banana, diced
    1/4 cup slivered almonds
    2 cups cooked white rice

Directions

Cut chicken into half-inch pieces. Sauté in oil in a large cast iron skillet until tender.
Drain pineapple and set juice aside; stir pineapple and red bell peppers into chicken.
In a small bowl combine the pineapple juice, water, cornstarch, vinegar, brown sugar, garlic, and ginger. Stir well, then pour into chicken mixture. Mix well and cook for 5 minutes until mixture thickens, stirring often.
Fold in banana and almonds. Heat through.
Serve over rice.
