Ingredients

For Pasta:
brown rice flour (with a little extra for srinkling)
eggs
For Filling:
garlic
onions
chicken
ricotta cheese
spinach

Directions
To make pasta, put the flour into your mixing bowl and add eggs. Mix the flour and eggs until a dough "ball" forms. Once the dough is mixed, remove the dough from the mixer and knead it by hand to form hand sized balls. Wrap each ball tightly in plastic wrap and let sit at room temp for about an hour.
Meanwhile, saute chicken, onion, garlic, salt, and pepper in olive oil unil browned. Let cool. In food processor mix spinach, ricotta cheese, and chicken mixture until well mixed.
Put chicken broth into large pot and begin to simmer. Place dough balls through pasta roller to form thin sheets of pasta. On dough mat, use a pasta bike to cut equal sized square shapes. Put a dab of filling in center of squares. Fold square into a triangle and bring points together to create the tortellini shape. Continue this until dough is used. Gently put made tortellini into boiling chicken broth and cook for 5 - 10 minutes until pasta is thoroughly cooked.
Serve tortellini in a bowl with some broth and sprinkled with freshly grated parmesan cheese if desired.
