Ingredients

2 c sprouted mung beans (not canned)
3 scallions cut into strips
1 piece ginger smashed
1 clove garlic peeled and smashed
2 tsp roasted sesame oil (or hot chili)
1T Kikkoman soy sauce
Directions
Note: this is not fried beans dish. DO NOT OVERCOOK. When bean sprouts are cooked too long the cells walls collapse and fill the pan/plate with liquid--not desirable. Cook this menu item AFTER everything else is ready to be served.
Preheat a wok (or skillet).
Flavor the oil: If using chili oil be sure to have good exhaust. Add to the hot pan the oil, then add the ginger & garlic. Stir fry quickly to flavor the oil. Remove & discard the ginger & garlic before they have a change to burn.
Sprouts & onion: Add to the hot pan of flavored oil. Quickly stir fry to heat the beans through.
Soy sauce: When the soy sauce is added it will further flavor and steam the beans briefly. Add the soy sauce; stir to coat sprouts.
Serve immediately.
