Ingredients

32 oz Sirloin, strip steak, lean only
4 cup, pieces or slices Mushrooms, fresh
3 cup Beef Broth - Swanson Low Sodium
3 tsp Dill weed, dried
4 clove Garlic
1.5 cup Sour Cream
8 oz Rice - Brown Pasta Penne, gluten Free by Lundberg (Trader Joe's) (by DELORES204)
8 cup Spinach, Baby (Simple Truth Organic)
Tips
You can substitute kale for spinach
You can also substitute Greek yogurt for sour cream however it has to cool longer prior to adding it or it will curdle and the texture will not be as creamy.
Directions
1. Brown the beef in a Dutch oven or deep sautée pan.
2. Stir in sliced mushrooms and sautée until tender
3. Add in beef broth and bring to a simmer
4. Simmer for 30 minutes
5. While mixture is simmering, prepare pot for pasta with boiling water and a pinch of salt. Once boiling add pasta and cook according to instructions on the bag.
6. Remove beef mixture from heat and let stand for 5 minutes.
7. Stir in spinach until wilted
8. Stir in sour cream a little at a time.
9. Plate 1/2 cup of cooked pasta and cover with a ladle full of the beef mixture
10. Bon appetit
