Ingredients

    1 cup, chopped Onions, raw
    2 stalk, medium (7-1/2" - 8" long) Celery, raw
    2 medium Carrots, raw
    2 clove Garlic
    0.25 cup Organic All-Purpose White Flour
    4 cup 365 Low Sodium Chicken Broth
    6 cup Cauliflower, raw
    1 tsp Thyme, fresh
    1 cup Whole milk
    1 tsp Salt
    1 tsp Pepper, black
    2 tbsp Butter, salted

Directions

Heat the oil in a large sauce pan over medium-high heat, add the onions, carrots and celery and cook until tender, about 8-10 minutes. Mix in the garlic, thyme and flour and cook until the flour is lightly browned, about 2-3 minutes. Slowly stir in the broth, deglazing the pan as you go, add the cauliflower and bay leaves, bring to a boil, reduce the heat and simmer until the cauliflower is tender, about 10-15 minutes. Add the cream, season with salt, pepper and cayenne to taste, remove the bay leaves, crumble bacon on top or on each serving, remove from the heat and enjoy. Serving Size: Makes 4 servings
