Introduction

Ingredients

    4 tbsp Lemon grass (citronella), fresh
    3 clove Garlic
    3 oz Chilli Pepper (by 4DDREAMSCAPE)
    2 tbsp chopped Shallots
    4 tsp Ginger Root
    4 tbsp Cilantro, raw
    1 tsp Cumin seed
    2 fruit (2" dia) Limes
    2 tbsp Fish Sauce - Nam Pla - Thai - 1 Tbsp 15g (by DUBTONY)
    2 breast, bone and skin removed Chicken Breast (cooked), no skin, roasted
    200 grams Mushrooms, fresh
    1 serving chicken oxo cube (by NEKEL16)
    1.4 cup Coconut milk (light)
    100 gram(s) Mange Tout (by MIAMIAMIA20)

Tips

add a teaspoon of black pepper to the paste


Directions

make a paste with the lemon grass, garlic, chillis, shallots, ginger, cumin, lime zest (keep the juice) and 1 tblsp of fish sauce. Blitz in a blender.

Heat the oil in a wok and add the sliced chicken, stir fry for a few minutes, add the paste cook ffor a few minutes more then add the stock, cocnut milk, 6 lime leaves and a tablespoon of green peppercorns. simmer till thickened. Add mushrooms and mange tout and simmer for a few minutes more then add the lime juice from the two limes. serve
