Introduction

We used to buy stuffed chicken breasts at the store, but when we started to watch our sodium intake, we were shocked to discover the sodium level was pretty much HALF our daily intake! So I came up with our own recipe. It's still no shrinking violet in sodium, but it's a LOT lower! Plus, you can customize your filling! Ingredients

    4 ounces Chicken Breast (cooked), no skin, roasted
    3 oz Baby Carrots Grimmway Farms (3 oz = about 10/11 baby carrots)
    1 tbsp chopped Onions, raw
    .25 stalks Celery, cooked
    1 tbsp Butter, salted
    .25 cup Bread crumbs, dry, grated, plain
    .25 cup, chopped Broccoli, cooked
    .75 oz Mozzarella Cheese, part skim milk

Directions

Sauté vegetables, mix in other ingredients. Chill filling completely in refrigerator, form into a ball and wrap chicken around it. roll lightly in bread crumbs. May freeze to cook later, or cook in crockpot until thoroughly cooked through. Enjoy!
