Ingredients

    6 small potatoes
    1 1/2 cup of sliced Okra (you can use frozen)
    1 chopped onion
    1 ounce of Jiffy corn muffin mix
    drizzle of Olive Oil
    salt and pepper to taste

Directions

mix all together
spread on a foil lined sheet pan

bake at 400 degrees 40 minutes stiring occasionally.
