Ingredients

1 c. - Old Fashioned Oats
1 c. - Milk, nonfat
1 c. - Whole Wheat Flour
1/4 c. - Splenda Brown Sugar Blend
1 tsp. - Baking Powder
1/2 tsp. - Baking Soda
1/2 tsp. - Salt
1 tsp. - Cinnamon, ground
2 tbsp. - Flaxseed
1 tbsp. - Honey
1/2 c. Applesauce, unsweetened
2 large - egg whites
1 tsp.- Vanilla Extract
Crumb Ingredients:
1 tsp. - Splenda
1 tsp. - Cinnamon, ground
2 tbsp. - Butter, salted
2 tbsp. - Whole Wheat Flour
Directions
1. Soak the oats in milk for about one hour.
2. Prehat the oven to 400 degrees.
3. Spray muffin pan with cooking spray.
4. Combine the oat mixture with the applesauce and egg whites; Mix until combined.
5. In a separate bowl measure and whisk the dry ingredients together.
6. Add wet ingredients to dry and mix until just combined.
7. Spoon muffin mixture into muffin pan.
8. In a separate bowl combine the crumb ingredients (cinnamon, splenda, flour and butter); 9. Cut in butter with a pastry blender or fork until mixture resembles coarse meal.
10. Place crumb mixture on top of each muffin.
11. Bake for 20 - 25 minutes or until done.
