Introduction

Don't, under any circumstances, lean close to the food processor bowl while making this - your eyes will thank you! After aging a week or so in it's vinegar brine, this is a delicious, zippy condiment perfect for your next roast beef or cheese sauce. Ingredients

    12 oz fresh horseradish, peeled
    1 large, raw beet, peeled and halved
    3/4 cup white vinegar, divided
    2 tbsp sugar
    1/2 tsp Kosher salt



Directions

Using processor fitted with shredder attachment, shred horseradish and beet.
Change the processor blade to the “chopping” S blade and return the horseradish mixture to work bowl.
Add ¼ cup of vinegar and process until mixture is almost smooth, scraping down sides of bowl occasionally, about 5 minutes.
Pack into a jar.
In a pot, combine the remaining vinegar, sugar and salt.
Bring to a boil, then pour over the mixture in the jar and seal.
Process 15 minutes in a waterbath.

Serving Size: Makes ~12 tbsp
