Ingredients

    3 eggs
    1/3 cup water
    About 1 cup hot red pepper sauce
    2 cups self-rising flour
    1 teaspoon pepper ( or to taste we use 1 Tbl)
    House Seasoning..recipe follows
    1 (1 to 2.5 pound) chicken, but into pieces
    Peanut Oil, for frying

    Paula's "House Seasoning"
    1 cup salt
    1/4 cup black pepper
    1/4 cup garlic powder

Directions

Season chicken with the "house seasoning" , cover and refridgerate for at least 2 hours.
Mix egg, water & hot sauce in a bowl until the egg mixture is a bright orange.
Mix flour and pepper in another vessel
Using a large pot, add peanut oil ONLY 1/2 way full with oil, thenheat oil to 375 and maintain at 350 while frying
Place chicken in wet then dry then fry 3 - 4 pieces at a time until a rich brown and crispy
Dark meat will take 13-14 minutes, while meat around 8 - 10 minutes.
