A variation on a South Asian stable. Endless variations are possible, with chopped vegetales, different seasonings, etc. A baked version would save a lot of the fat,, but I haven't worked that one up yet. Ingredients

    0.5 cup chickpea flour- Bob's Red Mill (by SUNSET_MISTRESS)
    15 gram(s) Green Banana Flour
    2 tsp Curry powder
    0.25 tsp Salt
    2 large Egg, fresh, whole, raw
    0.25 cup (8 fl oz) Yogurt, plain, whole milk
    0.5 cup, chopped Onions, raw
    2 oz Green Chiles (Whole)
    5 tsp Purity Farms Organic Ghee / Clarified Butter 1 tsp/5g=1serv
    0.5 cup (8 fl oz) Water, tap

Directions

MIx together flours, salt and curry powder (or garam masala) in a medium sized bowl. In a separate bowl, beat together eggs, yogurt, canned green chiles and chopped onion. Mix the egg/yogurt mixture into the flour mixter and add enough water to make a fairly thick, but pourable batter. Heat a 10" non-stick skillet over medium heat and melt the ghee in the skillet. When the ghee starts to shimmer, pour en the batter and spread evenly with a spatula. Cook until brwon around edges and bubbles start to form on the surace.Flip with a large spatula and cook the other side 2-4 minutes until done. Remove to plate and slice into wedges. Serve warm.

Serving Size: Makes four servings as a side dish, two as a main dish
