Number of Servings: 4

Ingredients

    2 lbs carrots
    3 tablespoons of maple syrup
    1/4 cup vegetable broth
    1 tablespoon extra virgin olive oil
    1 ounce lemon juice (fresh squeezed)
    Pinches of ground cinnamon, nutmeg and cloves
    Dash of salt to taste
    Dash of fresh ground black pepper to taste
    1 tablespoon fresh chives (chopped)

Directions

Makes 4 large servings

Preheat the oven to 275 degrees F.

Peel the carrots and lice into 1/2 thick circles.

Place the carrots in a 9" x 13" baking dish.

Toss in the remaining ingredients (except the chives).

Roast the carrots uncovered , stirring occasionally, for about 35 - 40 minutes until they are tender.

Transfer the carrots to a nice serving dish and sprinkle with fresh chopped chives.

Serve and enjoy the smiles on your guests faces.
